2023 Rare Hare Sparkling
50% Chardonnay, 50% Pinot Noir from the LL Vineyard, this is a traditional method sparkling wine, with the secondary fermentation, and the 20 months of maturation on lees occurring in this bottle. This gives a complex baked goods and honey hint to the delicate citrus fruit characteristics of the base wine. Disgorged in January 2025, with a 7 g/L dosage to balance the lively acidity.

Tasting Notes
Nose Aromas of quince, red apple and cranberry, with marzipan and crême patisserie notes.
Palate Fine, plentiful bubbles frame a full-flavoured palate, quite richly fruited with apple and quince weight, but well-balanced with the length of acidity and complementary dosage. A lovely aperitif, but able to match some richer food options.
