2020 Rare Hare Sparkling
100% Chardonnay from the LL Vineyard, this is a traditional method sparkling wine, with the secondary fermentation, and the 3 years of maturation on lees occurring in this bottle. This gives a complex baked goods and honey hint to the delicate citrus fruit characteristics of the base wine. Disgorged in August 2023, with a 11 g/L dosage to balance the lively acidity.

Nose Aromas of creamed honey, lemon meringue and freshly baked pastry.
Palate Fine, plentiful bubbles frame a lemon and honeyed length of flavour, with a delicate mousse adding texture and balance to length of acidity and complementary dosage. A lovely aperitif, but able to match some richer food options.
