2023 Rare Hare Moscato Bianco

This Moscato Bianco came from a neighbouring Mornington Peninsula vineyard, a rarity in varietal terms, and the last crop ever as these vines are making way for Chardonnay. It was pressed as whole bunches, and then cloudy juice transferred to old French barrels for wild fermentation to highlight the perfumed intensity but bring some textural complexity to the wine. The ferment was deliberately stopped with some residual sugar for balance.
