2019 Rare Hare Fumé Blanc
Let there be white. This cool-climate conception bounds with aromatic fruit flavour. Extra texture and a savoury finish makes this an ideal wine for modern food.
The Sauvignon Blanc was hand harvested from both our own vineyard, and Hugh Robinson’s warm Moorooduc site, pressed as whole bunches, and then cloudy juice transferred to old French barrels for wild fermentation to highlight the fresh fruit flavours but bring some textural complexity to the wine. The wine matured in barrel for 6 months before being bottled in October 2019.
