2016 Willow Creek Vineyard Brut
A kind, warm growing season, and moderate crops that ripened very early, gave us pristine fruit and a very compressed harvest period. The 2016 wines all have an abundance of fruit flavour and generosity in structure.
Hand harvested, whole bunch pressed with minimal rotations to ensure low phenolic extraction, the low-yield juice was clarified overnight, then racked to old French barriques for fermentation. Once dry, the base wine was blended and tiraged (the addition of sugar and yeast for the secondary fermentation) in September 2016 and remained on lees in bottle before riddling (shaking the yeast lees into the neck) and disgorging (freezing and expelling the yeast) in January 2020.
This traditional method sparkling wine is a blend of 30% Chardonnay and 70% Pinot Noir with rich berry and cream flavours and a delicate, long palate. Over three years on lees in this bottle has added depth and complexity to the palate.
